Fresh produce is commonly regarded as a low-impact food category, both nutritionally and environmentally.
While this assumption is true relative to meat (one pound of beef for instance takes 2,000 gallons of water), behind every fruit or vegetable there is still a quantity of water consumed during production, drawn from rainfall, irrigation, and the dilution of agricultural runoff.
This analysis draws on a set of 30 common fruits and vegetables, cross-referenced against the water footprint methodology established by Mekonnen and Hoekstra.

The Water Footprint of Fruit and Vegetables
Some fruit and veg need barely a splash to grow. Others quietly drink hundreds of litres. Scroll down to see how they compare, from thirstiest to lightest.

The Three Components of Water Footprint
Water footprint accounting divides agricultural water use into three categories, a framework introduced by Mekonnen and Hoekstra

Green Water (Rainwater):
The natural moisture stored in soil, drawn from precipitation and absorbed through a crop's root system.
This component accounts for approximately 80% of global crop production, or more precisely, 86.5% of total water consumed by crops.

Blue Water (Surface and Groundwater):
Water actively withdrawn from rivers, lakes, and aquifers for irrigation.
Agriculture accounts for roughly 85% of global blue water consumption, a substantial majority of all managed freshwater withdrawal.

Grey Water (Pollution Assimilation):
The volume of clean freshwater theoretically required to dilute agricultural runoff, primarily nitrogen fertilizer, to a concentration considered safe for receiving rivers and lakes.
The sum of these three components constitutes a crop's total water footprint. Individual crops vary considerably in which component dominates their footprint.
The Calorie-Water Relationship
A common assumption holds that fresh fruit and vegetables represent the most water-efficient way to obtain dietary energy, given their reliance on sunlight, rainfall, and relatively simple cultivation.
The data present a more complicated picture.
Measured by weight, fruits and vegetables do appear efficient, averaging approximately 322 mยณ of water per ton, compared with roughly 1,644 mยณ per ton for cereal grains.
Measured per calorie, however, a metric arguably more relevant to dietary energy needs, the relationship inverts .

Lower-Footprint Items
Kiwi (6.08 Gallons): Half a kiwi fruit (1.59 oz) requires 6.08 gallons.
Strawberry (1.06 Gallons): The lowest footprint recorded in this dataset. One strawberry, 0.42 oz, requires approximately 1.06 gallons of water.
Carrot (3.17 Gallons): A single carrot (2.15 oz) requires 3.17 gallons. Its water-to-weight ratio, 23.36 gal/lb, is among the most efficient in the dataset.
Chilli Pepper (4.49 Gallons): One chilli pepper (1.59 oz) requires 4.49 gallons.
Garlic (5.55 Gallons): A single bulb, 1.27 oz, requires 5.55 gallons.
Moderate-Footprint Items
Tomato (6.87 Gallons): A medium tomato (4.34 oz) requires 6.87 gallons. At 25.64 gal/lb, this is among the more efficient items in the dataset by weight.
Onion (7.93 Gallons): A medium onion (3.88 oz) requires 7.93 gallons.
Watermelon (17.96 Gallons): A standard wedge (10.09 oz) requires 17.96 gallons. Given its weight, its water-to-weight ratio, 28.52 gal/lb, is comparatively low.
Avocado (23.25 Gallons): Half an avocado, 2.65 oz, requires 23.25 gallons. At 140.55 gal/lb, this figure is among the higher ratios in this group.
Banana (26.15 Gallons): A single banana (4.41 oz) requires 26.15 gallons, consistent with the generally higher water demand of tropical fruit crops.
Cucumber (28.00 Gallons) and Potato (28.00 Gallons): Both require an identical 28.00 gallons per portion, despite the potato (13.02 oz) weighing considerably more than the cucumber (10.62 oz).
Higher-Footprint Items
Apple (39.63 Gallons): One apple (6.42 oz) requires 39.63 gallons of water.
Peach (42.00 Gallons) and Pear (43.32 Gallons): Orchard fruit generally shows elevated water demand. A peach requires 42.00 gallons, a pear 43.32 gallons.
Aubergine (52.31 Gallons): One aubergine (1.21 lbs) requires 52.31 gallons.
Pineapple (61.02 Gallons): A whole pineapple (2.00 lbs) requires 61.02 gallons.
Mango (98.54 Gallons): A single quarter of a mango (7.30 oz) requires 98.54 gallons, the highest figure recorded for any single fruit portion in this dataset.
Coconut (141.33 Gallons): The largest figure in the dataset. Half a coconut, 7.02 oz, requires 141.33 gallons, equivalent to 321.97 gallons per pound, the single most water-intensive item examined here.
Does the math change on a per serving basis?
Of course.
It may take 141 gallons of water to make half a coconut - but really, who eats half a coconut as a single serving?
No one (but no judgement if you do)
You get the point. Half a Coconut can last for up to 8.8 servings, which changes the math completely if we were to consider the water footprint for a single serving of fruit or vegetables in a meal.

Chilli pepper's portion is described only as "enough for a few servings," so a value of 3 servings was assumed to calculate its per-serving figure. Treat these four figures as estimates rather than direct measurements.
